Choco Crunch Cups

Present day: coming off of Christmas and New Year's. While I didn't go TOO crazy, Christmas cookies were consumed....and that leaves a girl with some major withdrawal! To combat the sugar cravings and trick my mind, I make a batch of these bad boys and NOM, crisis averted.
Here's the recipe:
Ingredients:
Small paper cups (smaller than cupcake cups)
1 tbsp of coconut oil
1/2-1 scoop of Vegan Shakeology (I only use this because its full of superfoods and vitamins
Organic Crunchy Peanut butter
Slivered almonds (optional)
Instructions:
Melt coconut oil in microwave, should take 30-60 seconds
In the bowl with the oil slowly start to add the Shakeology, only a little at a time. You want to get the consistency thicker than oil, but thinner than a yogurt texture
In the paper cup fill up with chocolate concoction half way.
Add less than a tsp of peanut butter in the middle of cup
Cover the rest with a little more of the chocolate concoction
Do this with as many cups as this serving allows you, freeze for 1-2 hours and then enjoy. Keep in freezer when you are not consuming.
I love to make a big batch and snack through out the week. Be careful though, they are addictive!
