Containing broccoli and avocado (Follicular phase friendly foods) and kale (menstrual friendly food), this soup is delicious, creamy and full of veggies and healthy fats that would pair perfect with any protein for a well-balanced meal!
Creamy Broccoli soup & Kale Salad
(makes 6 servings):
Ingredients:
-2 TBSP coconut oil
-½ medium onion chopped
-2 garlic cloves minced
-5 cups of organic vegetable broth
-5 cups of broccoli chopped
-1 ½ cups of kale, de-stemmed & chopped
-2 TBSP of Nutritional Yeast
-1 medium avocado, chopped
-Sea salt & pepper to tasted
INSTRUCTIONS:
In a large pot heat coconut oil. Add onion and garlic and cook for 5 minutes
Add veggie broth & bring to boil
Add broccoli & kale, turn to simmer, cover for 2-3 minutes. Then set soup aside to cool for a few minutes
Add nutritional yeast & avocado to the pot
Transfer soup to blender (you may need to do this in batches) and blend until smooth.
Use 1 cup of soup as serving & put the rest in the fridge for future days
