Follicular Phase Egg Rolls


Ingredients (6 egg rolls): 1 cup frozen or fresh broccoli 3/4 cup pickled onions/kimchi or sauerkraut 1-2 shredded carrots 1 small avocado diced Olive oil or sesame oil 1 tbsp coconut aminos Nasoya vegan egg roll wraps Sweet chili sauce for dipping (optional) . Instructions:

  1. Heat small amount of oil in medium sauce pan and sauté frozen or fresh broccoli for 5-7 min

  2. Add in pickled veggies and carrots. Saute another 3-5 min

  3. Add in coconut aminos and cook another 2 minutes

  4. Turn off heat and let pan and veggies cool for 5-10 min

  5. Dice up desire amount of avocado and get egg rolls out

  6. Assemble eggs rolls one by one by placing wrap diagonally and small amount of veggies and avo in the middle. Roll and fold in the sides (like a burrito!) and leave assembled with the flap underneath (instructions are on egg roll container if needed)

  7. Once all egg rolls are assembled, place a decent amount of oil in a clean sauce pan and heat for 3-5 min or until hot!

  8. Place egg rolls in and fry for 1-2 min each side (until they are brown and crispy). Rotate and fry all angles as needed

  9. Place egg rolls on towel to absorb oil, then pair with your favorite dipping sauce and enjoy!
